Greetings Golfers!

GREAT NEWS ... for all of you that took advantage of LPGA International's Customer Appreciation Week, we thank you.  For all of you that could not make it out due to "Fay" we have decided to extend our "Customer Appreciation Month" for Daytona Beach and Volusia County residents from August 24th through Labor Day Weekend.  The golf rate will be $30.00 plus tax with a valid Daytona Beach or Volusia County identification.  You can bring your friends from out of the area for $35.00 plus tax per person.  

I have received requests from residents of Flagler County this week and I want you to know that we appreciate your business as well and would like to extend a special rate of $35.00 per person plus tax with a valid Flagler County identification.  We invite you to bring your friends from out of the area for $40.00 plus tax per person.  These rates will be available from August 24th through the Labor Day Weekend.  

Call the golf shop early at 386-523-2001 for your prime time tee time!  Take advantage of our excellent course conditions.

Results

We finally had our highly anticipated ECC Pro- Pro Tournament on Champions Course this past Monday August 18, 2008.  As promised I am reporting the scores from Mary, our Director of Golf and Craig, our Head Professional.

We had a great day, the rain held off so everyone was able to finish and many of the pros told us that the Champions Course was in fantastic shape as always!  Craig and Mary came in 4th place with a 68 and Mary was closest to the flag on #6.  Wow, excellent representation from our Pros!

We are all looking forward to the North Florida PGA Section Championships next week.  Practice rounds will be on August 23rd and 24th.  Monday, August 25th is the North Florida PGA Warm up and then the tournament will be August 26th-28th.

golf tip

Our tip this week comes from our special guest Jin Seo, a visiting Korean LPGA Tour Player from Seoul, Korea. 

How do you play a ball that is below your feet? 

The most important aspect that a player must adjust to when the ball is below your feet is to establish a good base for a  balanced swing.  Start with a wider stance and position your weight either centered or back on your heels.  When the ball is below your feet, you have a tendency to let your weight fall forward on your toes as you swing loosing your balance.  I like to widen my stance, set my weight in the middle or back of my feet in my set up.  Take one more club for distance and position the ball in the center of my swing.  I use a half swing, aim slightly to the left as I am a right hander and expect the ball to fly to the right.  While swinging, my concentration is on a smooth tempo and getting solid ball contact.  My results are very good if I take my time in my set up before I execute my shot.  Of course, taking the time to practice this shot will also help.  Good luck and try this shot on your next round of golf.

If you need additional help with your game, you should sign up for one of the many golf clinics that are available at LPGA International.  The certified PGA and LPGA professionals will help you with your game and lower your score.

Saturday, August 23rd is the date for our Pro Shop Sale. We’ll be clearing out Summer apparel, shoes and accessories for Men and Women.

Club Demonstration and Golf Shop Special Summer Sale on August 23 from 9 to 2. We will have club fitting available for men and women by our PGA and LPGA professional staff along with representatives from Titleist, Cobra and TaylorMade companies. Sky Caddie GPS systems will be involved to share the latest in hand held technologies for distance systems. The Sky Caddy system is a great way to get the yardages you need to help you plan your golf shot on the course. I like to use my Sky Caddy on the driving range to figure out how far I am hitting my specific irons and wedge shots.

jesse's recipe of the month

Lump Crab CakesWild Mushroom Gratin

Crab Cake Ingredients
Makes approximately 12 small cakes

1 lb Jumbo Lump Blue crab
1 Small shallot minced
1/2 Small bell pepper minced
1 tbs Chives
1/4C Mayo
Juice of 1/2 lime
1tsp Stone-ground mustard
Splash of Worcestershire
Pinch of Cayenne
1/4 cup Panko bread crumbs. 
Salt, white pepper
Citrus Chutney Ingredients

Reduce 1 cup orange juice to 1/4 cup
Juice and zest of 1/2 Lime
Juice and zest of 1/2 Lemon
1 tsp Dijon mustard
¼ cup Orange Marmalade
1 tsp minced shallot
Salt and Pepper
 

For the crab cakes, mix all of the ingredients in a large mixing bowl by gently folding everything together.  You don’t want to break up the lumps of blue crab too much.  Once combined, place mixture in refrigerator to cool.

For the chutney, place the orange juice in a small sauce pan and cook over medium heat until it is reduced to 1/4 cup.  This can be tricky, but try and eyeball it until it looks right, then measure to see if it is 1/4 cup.  If it’s a little more, cook it for another minute or so.  The important part is for the mixture to be concentrated and slightly thicker.  Once it is reduced, set aside to cool for a few minutes.

The remainder of the ingredients can be combined in a small bowl, and then combined with the reduced orange juice.  Salt and pepper to taste.

An easy way to portion the crab cakes is to use an ice cream scoop.  Once portioned out, shape them to resemble small hockey pucks.  To cook crab cakes, place 1 tablespoon of butter in a Teflon pan over medium heat and add crab cakes.  Cook them in batches so the pan is not too crowded making it hard to flip the cakes.  After a minute or two they should be browned and ready to be flipped and cooked for another minute or two on the other side.  You are just basically warming them through.

Place a small amount of chutney in the center of a small plate.  Place two crab cakes on the plate and garnish with fresh chives.  Enjoy!
